My take at the #ChickenShawarma / #shawarma #roll 👨🏽🍳 This by no means is the authentic recipe for shawarma, just how I remember it tasted when made by street vendors in India.
Ingredients (change as per scale):
1 chicken leg quarter and 2 chicken breasts [pounded so it cooks evenly]
3 tablespoons olive oil
1 teaspoon dried parsley leaves
1 teaspoon cumin powder
1 tsp black pepper powder
2 tsp red chili /Cayenne pepper powder
1 tsp coriander powder
2 tablespoons of paste made from [1 garlic clove,1/2 inch fresh ginger, 2 green chillies 1/2 cup freshly chopped cilantro, 1 tsp dried mint leaves or fresh and 4 tablespoons olive oil]. Note: If you want sauce on the side along with the shawarma scale up these ingredients and make more sauce.
Salt 1 1/2 tsp or as per taste
2 chapatis or paratha for roll
Some chopped veggies (red onions, bell peppers, etc..) Step 1: Marinate the chicken with the ingredients mentioned above and leave in the fridge for at least 2 hours.
Step 2: Grill the chicken for 35 minutes at 415 degrees farenheit and keep applying ghee/butter/coconut oil so it doesn't get too dry.
Step 3: Take the chicken out of the oven and leave on the table for 3-4 minutes. Chop it into pieces as desired for shawarma.
Step 4: Cook the chapati/parathas and apply the paste we made to marinate. Throw some crunchy veggies [onions, bell peppers, etc...] and the chicken from step 3.
Roll and serve with some crunchy veggies and the sauce we made.
